Servings: 3-4 adults
Time: about 30 mins
1 very large red onion chopped into chunks
1/4 cup of butter for sauteing
1 cup of frozen french cut green beans.
1 1/2 cups of cubed chicken
1 1/2 tsp curry powder
2 tsp of cilantro or parsley (fresh or dried)
salt and pepper to taste
1/3 cup of fresh lime juice (one whole lime)
Start sauteing onion in butter. When onions are close to being done add green beans. Then after a few minutes add chicken. When chicken is just about done add curry powder and other seasonings. When it is done add the lime juice and stir together.
Serve over hot rice.

Sunscreen
This year I was determined to find a healthy but effective sunscreen.
My choice: Badger Sunscreen for Face and Body, SPF 30 Lightly Scented
It isn't the cheapest thing out there, but I think the benefits outweigh the price.
The EWG rated it a 1. I love being able to see the ingredients and know what they mean.
